A composite of Gewurztraminer and Riesling was fermented separately in open containers, with part of the Riesling drained into 5-gallon buckets and put into a freezer. After the wine fermented, the frozen Riesling juice was added just before bottling, where a secondary fermentation took place, resembling something like Methode Ancestrale. The wine itself is a beauty of a sparkler - fruit-forward with tons of pear, grapefruit and green apple skin over a solid mineral backbone
